In honor of St. Patrick's Day, we wanted to share two festive yet simple and healthy breakfast options.

The First recipe is for Shamrock Eggs.

Shamrock Eggs

Ingredients

  • 1 green bell pepper
  • 4-6 eggs
  • Oil (coconut or olive work well)
  • Salt and pepper

Instructions

  1. Lay lay bell pepper on its side and slice into 1/4 Inch slices or about 4-6 slices. Remove seeds and core.
  2. Add oil to pan and heat over medium high heat.
  3. When oil is heated place bell pepper slices in pan.
  4. Crack one egg in the center of each ring.
  5. When eggs begin to turn opaque cover with lid to steam cook.
  6. Cook for 4-6 minutes till eggs are cooked to preferred firmness. The longer you cook the firmer the egg yolk will be.
  7. uncover and season to taste with salt and pepper.
