Spicy Beef on Cucumber Boats

Ingredients

  • Beyond Organic Ranch Roast Chopped
  • 505 Roasted Green Chili Sauce (from CostCo)
  • Shredded Organic Sharp White Cheddar (from CostCo)
  • Cucumbers
  1. Mix chopped ranch roast, green chili sauce, and cheese in a bowl.
  2. Prepare the cucumber boats by slicing a cucumber into 1" thick slices. Use a small spoon or knife to carve out some of the center of each cucumber slice.
  3. Assemble by simply placing a small scoop of the meat mixture on each cucumber boat.

Create a simple appetizer or dinner in just minutes!  Beyond Organic Ranch Roast is seasoned, fully cooked, fork-tender pulled beef that comes in 1.5 pound frozen packages.  505 roasted green chili sauce adds a spicy kick to the beef.  If you cannot find the 505 sauce, make your own.  It is made from 3 ingredients:  Roasted green chilies, lime juice, and garlic salt.  Mix this all together and eat as is, in a lettuce leaf, or in a cucumber cup like we did for patient appreciation day!

Paleo “Salad” Pizza

I have made this pizza before.  I use the baba-ghanoush as the sauce, and then throw my favorite Mediterranean toppings on the pizza.  At patient appreciation day I used cucumber, red onion, kalamata olives, sun-dried tomatoes, feta cheese, and arugula that I dressed in the seasoned olive oil from the sun dried tomatoes. This pizza   Easy to serve room temperature at a party.

Below you will find the recipe for the gluten free pizza crust and the baba-ghanoush.

Pizza Crust

Ingredients

  • 2 cups almond meal
  • 2 eggs
  • 3 tablespoons extra virgin olive oil
  • ¼ teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 ½ tablespoon fresh rosemary, minced

  1. Preheat oven to 350 degrees Fahrenheit .
  2. Using a spoon, mix all crust ingredients together until it becomes very thick. Using your hands, form the dough into a ball. If the dough is too sticky, add more almond flour. I like to use the course almond meal like what you will find from Trader Joe’s.
  3. Place sheet of wax paper on a pizza pan or a baking sheet with extra virgin olive oil. Place the ball of dough in the center of your baking sheet or pizza pan and cover with another piece of wax paper. Using your hands, push and pat the dough down into the shape of a circle, making the dough as thin as possible. Your pizza will be about 12 inches across. Once the dough is the desired shape remove the top wax paper.
  4. Bake the crust in your preheated oven for 20 minutes.

Paleo Baba-ghanoush recipe

Ingredients

  • 2 large eggplants;
  • 2 garlic cloves, minced;
  • 2 tbsp fresh lemon juice;
  • 2 tbsp tahini (optional);
  • 3 tsp extra virgin olive oil;
  • 1 tsp cumin (optional);
  • Salt and pepper to taste;
  • Fresh parsley, optional, for garnishing.

Technique

  1. To roast the eggplants, either use your grill, the open flame of a gas stove or your oven. If using an open flame, keep the eggplant near the flame and turn them often to darken the skin evenly. If using your stove, prick the skin with a fork and roast for about 35 minutes in a 400 F oven.
  2. Put the roasted eggplants in a bowl of cold water, wait a bit and then peel off the skin.
  3. Place the roasted eggplant, garlic, lemon juice, tahini, olive oil, cumin in a blender and blend until smooth. Season to taste with salt and pepper.
  4. Cool in the refrigerator and serve with extra olive oil on top and fresh parsley.

Gluten Free Brownies

  • Trader Joes Gluten Free Brownie Mix
  • Add 1 egg, 1 tsp baking powder, 4 oz of chocolate

This is a great mix, but adding the above ingredients gives the brownie a better texture.  At patient appreciation day we added 4 oz of dark chocolate.  These tips were given to us by our friend Joy Paul at TM Building Damage and Restoration.  She is a great baker!

Gluten Free Coffee Cake

Ingredients

1/4 c. coconut oil

1/4 c. honey

1 egg

1 tsp. vanilla

1/2 c. milk (coconut or raw)

1 1/2 c. almond flour

1 tsp. cinnamon

2 tsp. baking powder

1/2 tsp. sea salt

Topping

1/2 – 3/4 c. almond flour
1 1/2 tbsp. coconut oil
1 tbsp. honey
2 tsp. cinnamon

Directions

  1. Preheat oven to 350.
  2. Stir coconut oil, egg, vanilla and honey together in a bowl.
  3. In a small bowl, combine almond flour, cinnamon, baking powder, and sea salt
  4. Add dry ingredients to wet along with milk, and stir until smooth.
  5. Pour into an 8×8 baking pan.
  6. In a small bowl mix the almond flour, coconut oil, honey, and cinnamon for topping.
  7. Spread the topping over the cake.
  8. Bake for 20 – 25 minutes.
