This post is for all of you cutting out wheat. This is by far the breakfast my kids request and love the most. It is great when you are craving a baked treat and is full of healthy protein.
Apple Pancake
1 apple thinly sliced
1/2 cup blueberries
1 tablespoon organic butter or coconut oil
2-3 tablespoons brown sugar (to taste)
1 teaspoon cinnamon
1/4 cup oats
Sprinkle of chia seeds (optional)
1 teaspoon vanilla
1/2 cup almond milk
1/2-3/4 cup ground almonds or pecans or oats
2 tablespoons flax meal (optional)
3 organic eggs
Melt the tablespoon of butter or oil in the bottom of a glass pie pan. Sprinkle the sugar and cinnamon on top of the butter.
Cover the entire bottom of the pie pan with thin apple slices.
Sprinkle the apples with oats and chia seeds.
Grind almonds to a fine flour.
Mix together ground almonds, eggs, vanilla, almond milk, and flax meal to make the batter. Pour the batter over the apple slices.
Sprinkle the batter with blueberries. Place in the oven at 350 degrees and bake for 25 -30 minutes or until the batter is firm.
When done loosen the edges of the pancake with a knife and flip the pancake over upside-down onto a plate to serve.
We like to get creative now and then and switch peaches instead of apples or pecans instead of almonds. Lets us know your favorite combination. Enjoy!
